Here’s a much needed break from the onslaught of rich holiday foods; get your new year off to a good start with this delicious yet healthy Paleo sweet potato bread packed full of protein thanks to loads of pecans and earthy cricket flour; 1 slice boasts a whopping 9 grams of protein and 3 grams of fiber! Put your left over sweet potatoes to good use.

- 1 cup almond flour
- 1/2 cup cricket flour
- 1 tsp baking soda
- 1/4 tsp baking powder
- 1 tsp salt
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 cup coconut sugar
- 1/4 cup honey
- 3 eggs
- 3 tsp coconut milk
- 2 tbsp lemon juice
- 1 large sweet potato
- 1/2 cup chopped pecans
- Preheat oven to 350 and rub oil / nonstick spray on two mini loaf pan or one
- Combine dry ingredients thoroughly.
- Whisk together honey, eggs, and lemon juice.
- Stir wet ingredients into dry ingredients.
- Beat and lightly whisk baked sweet potato until it reaches a smooth texture and is free of lumps.
- Add sweet potato and pecans to bread batter, combining only as much as necessary. Do not over mix batter.
- Divide batter between two mini loaf pans or single regular loaf pan and bake for 30-35 min at 350F. Bake until toothpick comes out clean.
***Sweet potatoes are loaded with Vitamin A which is great for you skin and connective tissues, while crickets are loaded with iron and calcium to better build strong blood and bones ... this paleo sweet potato bread is fit for Popeye!
