Chapulines are in season, just in time for the Bug Fest at the El Paso Zoo! This delicious chapulines recipe, along with many others was crafted by executive chef Miguel Gullien. Though Chapulines can be tricky to source, they are occasionally carried in Mexican grocery stores during the summer months or sourced through Small Stock Foods. Non-Sphenarium whole grasshoppers can be purchased from Grub UK. Healthy, savory, and crisp – this chapulines recipe is a great introduction to a classic Mexican edible insect.
Ingredients
- 6 oz grasshoppers frozen chapulines
- 1 tbsp garlic powder
- 1 tbsp seasoned salt
- 1/2 red bell pepper diced
- 1/2 yellow bell pepper diced
- 1/2 green bell pepper diced
- 1/2 red onion diced
- 1 tbsp butter
- blackening seasoning add to taste
- 1 cup lettuce shredded
- 1/2 cup chopped tomatoes
- 1 bag tortilla chips round chips / mini tostadas

Instructions
- Thaw frozen chapulines in fridge
- Season chapulines with garlic powder and seasoned salt, then toast in oven for 4-5 min at 350F.
- Finely dice red bell pepper, green bell pepper, yellow bell pepper and red onion. Saute veggies in butter over medium high heat until slightly tender.
- Add chapulines to sauted veggies along with blackening seasoning to taste and remove from heat.
- Layer each mini tostada / tortilla chip with a layer of chapulines-veggie saute, shredded lettuce, and freshly diced tomato. Enjoy!
