San Antonio knows how to do a bug dinner. The recent Witte Museum Salud Bug Dinner was a smash hit thanks the culinary genius of Executive Chef Stephen Paprocki and Ernest Lopez, Pastry Chef of Eilan Hotel. Guests at this posh bug dinner enjoyed an exquisite 4-course meal with spot-on beer parings from the Karbach Brewery. First dinners learned how insects played an integral role in the People of the Pecos hunter gatherer way of life from Dr. Harry Shafer, Curator of Archaeology at the Witte Museum. Then I discussed the sustainable, nutritious and humanitarian promise of the entomophagy movement. More beautiful food photos from Leandra Blei.
The setting was beautiful.
